Twenty-one days is when the body stops being a tourist in South India and starts to be a participant in it. Ayurveda requires time to do what it does — not a treatment, but a recalibration. Yoga, practised daily in the same shala with the same teacher, stops being exercise somewhere around day twelve. The cooking workshops stop being cultural.

By the end of twenty-one days, the rhythms of the South — the early fire, the evening aarti, the particular pace of a life not ruled by urgency.
